What are "babyback" ribs?
Babyback pork ribs is not from "baby pigs." They are loin ribs cut from higher and further back on the hog. The meat tends to be more on top of the bones.

What are "St. Louis" cut ribs?
The St. Louis cut ribs are trimmed spare ribs. Spare ribs are cuts from lower on the hop closer to the belly. They have more fat than "babyback" ribs and the meat tends to be between the bones rather than on top of it.

How long do you BBQ ribs?
The ribs are in the BBQ smoker oven for 4.5 to 5 hours.

Bone-in pork shoulder roasts are in the smoker for 12 hours. The the meat is separated from the fat, connective tissue, and bone, and then it is shredded.

What is real BBQ?
Real BBQ happens when you cook meat a long time at a low temperature in the presence of wood smoke with an indirect heat source. This is sometimes referred to as "low and slow" cooking. BBQ is different than grilling, which is cooking meat or vegetables directly over the heat source.

How long do you BBQ brisket?
Brisket is in the 200-degree BBQ until the internal temperature in the thickest part of the meat reaches 185 degrees. This could take from 16 to 18 hours. During the BBQ process, the fat renders out of the meat and the connective tissue melts. The brisket, which is a very "tough" cut of meat becomes very tender, juicy, and full of flavor. After the brisket is BBQed, I slice it and clean it slices discarding most of the remaining fat.

I make dry ribs. They are BBQed without any sauce. If you want wet ribs, you can add sauce when you re-heat them. The best BBQ emphasized the dry rub and the flavor of the meat not BBQ sauce.

How much does a typical rack of ribs weigh?
Whether it's St. Louis cut spare ribs or pork loin "baby baCharliebs," weights range from 1.5 to 2.5 pounds.

How much does a single short rib of beef weigh?
Individually short ribs of beef weigh between one and 2 pounds.

How do I reheat frozen ribs?
To reheat the ribs, thaw them out overnight. After they are completely thawed out, remove the plastic wrapper. Wrap them in two layers of aluminum foil and place them in a 250-275 degree oven. Reheat them thoroughly which mean that you will need to heat the bones as well as the meat. It may take 30 to 45 minutes to reheat them thoroughly.

If you are going to heat up a few ribs at a time, cut of a couple of ribs and place them in a microwave on high for about 45 seconds.

What ingredients are the dry rub for pork?
The dry rub for pork contains dark brown sugar, paprika, white pepper, Kosher salt, black pepper, garlic powder, onion powder, ground ginger, ground mustard, ground cumin, allspice, hops, nutmeg, cayenne, and ground chipotle.

What if I don't like my ribs too spicy?
You can order ribs either spicy or mild. The mild dry pork rub does not contain chipotle or cayenne, and it contains less white and black pepper.

How do you make pastrami?
I made pastrami from corned beef brisket, which is brisket soaked in brine. Pastrami can also be made from other "corned" (brined) cuts of beef, such as round. Making pastrami is very similar to making BBQ brisket except that you use a corned beef brisket with a pastrami rub.

What's in the pastrami rub?
Kosher salt, paprika, coriander seeds, brown sugar, black peppercorns, yellow mustard seeds, white peppercorns, and garlic.

How do you make rendered duck fat?
When I BBQ a duck, I save the fat, filter it, and pour it into 1/2 pint jars. Rendered, filtered duck fat will last many months in your refrigerator. Duck fat is 33% saturated, 50% monosaturated, and 13% polyunsaturated. Pork fat (lard) is 39% saturated, 45% monosaturated, and 11% monosaturated. Butter is 50% saturated, 30% monosaturated, and 4% polysaturated.

Can you suggest some ideas for using BBQ porkbelly?
You can slice it and fry it like bacon. For example, you can use it in PBLT sandwiches. You can put slices in other sandwiches, such as grilled cheese. You can put cubes of it in casseroles, such as mac 'n' cheese. You can make porkbelly and pineapple skewers and then grill them.
